Guzzle is collaborating with Note on our final launch event to mark the release of Issue Three: A Hunger for Home.

After nine years cooking around the globe, Sam Kindillon has returned home to Dublin, bringing a wealth of experience and a fresh perspective to Note. For the Guzzle launch, he’s mining the flavours of childhood, turning memories of home into a menu of considered bites. 

Sam Kindillon began his culinary journey at L’Ecrivain under John and Sandy Wyer and Michelin-starred chef Derry Clarke. His path has taken him from Dublin to London, Yorkshire, and Copenhagen — honing his craft at Amass and Manfreds — before stints as Head Chef at Mrs Robinson’s and Ora in Berlin.

Across kitchens, his focus has remained the same: seasonal vegetables and fish, simplicity, and pure, honest flavours. At Note, he brings a renewed rhythm between kitchen and service, reflecting the restaurant’s ethos: a seamless dance of food, wine, and design.
